Tacos de Camarones

Sine I moved to Texas, I have been exposed to lots of new things. For example, I’ve been able to experience 95 degree weather in May. Not so excited about that. However, I am excited about tacos. Maybe it’s the fact that the corn tortillas are ridiculously good here. They have a tortilla making station in the grocery store where people are continuously making fresh tortillas. Someday I’ll write about how much I love the grocery store. Anyways, you can easily customize these using whatever protein or vegetables you have in the fridge. I’ve listed some ingredients that go well with shrimp but feel free to combine your favorite flavors and enjoy!

Tacos de Camarones aka Shrimp Tacos

  • Avocado
  • Corn
  • Tomatoes
  • Lettuce
  • Pico de gallo
  • Black beans
  • Onions
  • Garlic
  • Cilantro
  • Lime

Heat a stovetop or outdoor grill to medium-high. Season the shrimp with olive oil, chipotle or chili powder, and salt in a large bowl. Toss to coat. Cook the shrimp until translucent, about 1 1/2 to 2 minutes on each side.
