Brown Butter & Coffee Sugar Cookies

These might just be the best cookies I’ve ever made. How could you go wrong with the combination of brown butter, coffee, and sugar? You could just use regular butter but going the extra step and browning the butter adds a deeper and nutty flavor. I made a gluten free version for my birthday and might just make them again in honor of my brother’s birthday this past weekend. He’s officially a 20 something now too 🙂

Brown Butter & Coffee Sugar Cookies

Ingredients

1 cup browned butter (here’s how to brown butter, make sure to chill it back to a solid state)
1 1/4 cups sugar
2 cups flour (all purpose gluten free or regular)
1/2 teaspoon baking powder
2 eggs
2 tbsp. fresh ground coffee (you can also use instant crystals or powder)
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon salt

Preparation Instructions

In a mixer, cream together butter and sugar. In a small bowl, combine eggs, vanilla, and coffee until fully incorporated. In separate bowl add together flour, baking powder, cinnamon, and salt. Slowly add your egg mixture to the butter mixture until well combined. Slowly add flour mixture until fully combined, do not over beat. Chill this dough for AT LEAST one hour, preferably overnight. When you are ready to bake, preheat oven to 375 degrees and bake for 8-10 minutes, or until edges are slightly golden.
