Google broccoli and cheese and you will be left with pages and pages of websites claiming they have the best recipe for this winning combination. Personally, I don’t think you even need a recipe; just combining the two ingredients is good enough. The other day I was craving broccoli (yes I crave broccoli) and spotted some corn meal in the back of my pantry. I decided to add some cheese to the mix and the result was a creamy and delicioso broccoli and cheese polenta.
Broccoli and Cheese Polenta
1 pound cooked broccoli (frozen would work, I sautéed some fresh)
1 cup polenta
3 cups chicken broth
2 tablespoons extra virgin olive oil, plus more for drizzling
Handful of grated cheddar cheese, plus more for serving
Kosher or sea salt
(I added some mushrooms too but those aren’t necessary for deliciousness to occur)
Heat a medium sized sauce pan over medium heat. Add chicken broth and let it come to a boil. In a steady stream, add the polenta whisking the entire time. Keep whisking until smooth.
Let cook about 15 minutes and add the rest of the ingredients and stir to combine.
Cook about 5-8 minutes longer and serve.
