Sometimes there are nights where my mom makes dinner but I still want to cook! And since my parents have asked me to stop making so many sweets, I need to find ways to contribute in other ways. Enter spinach! Okay so I added a little bacon but it’s still a vegetable side dish and super simple to make. The hardest part is peeling the garlic cloves and trust me, smashing garlic is fun.
Simple Sautéed Spinach (like the alliteration?!)
1 (or 2) slices of bacon, chopped roughly
2 garlic cloves, finely chopped
2 cups spinach
2 T balsamic vinegar
salt and pepper
Heat a medium skillet over medium high heat. Add the chopped bacon and cook until almost crisp. Add garlic and cook until fragrant. Add 1T balsamic vinegar and stir, scrapping those delicious bits of bacon and garlic off the bottom of the skillet. Add the spinach a little at a time. Toss with tongs until wilted. Add balsamic vinegar. Season with salt and pepper.
